There does not seem to be an option to disable save. When you change the download location in Safari, it will just save the file in a different location. The difference, is that both Mac programs force saves the files to the specified download location. Thunderbird Windows opens PDF, DOC, etc attachments in their respective applications, so does TBird Mac.
